The winemaking function of the historic building has been resorted with the installation in the crucifix-shaped hall of the latest generation in processing and fermentation equipment.
Double selection tables. Gravity decantation from the platform uniting the vats. Multiple sizes of tanks, adapted to the size of the specific plots of land, allowing for the separate vinification of each vineyard. Pissage, Remontage or a combination of both can be applied, according to the characteristics of the wines.
Up to the final assemblage, the aging of the wines is done in large French oak barrels, housed in the old presses that have been connected to form underground galleries, with constant temperature and humidity.
Later bottle aging in the climate controlled, non-natural light warehouse annexes.
An inviting public reception area is on the ground floor access level near the offices.
